Gribiche Sauce

Sauce Gribiche

Ingredients

  • 2 hard-boiled egg yolks, mashed
  • 125 ml (1/2 cup) vegetable or olive oil
  • 15 ml (1 tbsp.) mustard
  • 2 gherkins, finely chopped
  • 15 ml (1 tbsp.) capers, drained
  • 2 hard-boiled eggs, coarsely chopped
  • 1 bunch herbs (parsley, tarragon, chervil), finely chopped
  • Salt and pepper to taste

Preparation

In a bowl, mix the hard-boiled egg yolks with the mustard. While whisking, slowly add the oil until you obtain an emulsified consistency (similar to mayonnaise). Add gherkins, capers, chopped hard-boiled eggs and herbs. Season with salt and pepper. This sauce is perfect with cold meats or vegetables.
