Grilled cheese with pulled pork, apricot jam and pickled onions

Ingredients

  • 2 red onions, thinly sliced
  • 30 ml (2 tbsp) olive oil
  • 60 ml (4 tbsp) white vinegar
  • 30 ml (2 tbsp) maple syrup
  • 15 ml (1 tbsp) pink peppercorns, crushed
  • 8 slices brioche bread
  • 30 ml (2 tbsp) butter
  • 8 thin slices cheddar cheese
  • 500 ml (2 cups) pulled pork
  • 60 ml (4 tbsp) apricot jam
  • salt and pepper to taste

Preparation

  1. In a hot skillet, brown the onions in the olive oil for 4 to 5 minutes.
  2. Add the vinegar, maple syrup, pink peppercorns, salt and simmer for 2 to 3 minutes over low heat.
  3. On one side of each slice of bread, spread the butter.
  4. On 4 slices of bread, on the unbuttered side, place 1 slice of cheese, distribute the shredded cheese, jam, prepared onions, another slice of cheese and a slice of bread with the buttered side on top.
  5. In a frying pan, over medium-low heat, grill the sandwiches, 2 to 3 minutes on each side.
