Ingredients
- 2 red onions, thinly sliced
- 30 ml (2 tbsp) olive oil
- 60 ml (4 tbsp) white vinegar
- 30 ml (2 tbsp) maple syrup
- 15 ml (1 tbsp) pink peppercorns, crushed
- 8 slices brioche bread
- 30 ml (2 tbsp) butter
- 8 thin slices cheddar cheese
- 500 ml (2 cups) pulled pork
- 60 ml (4 tbsp) apricot jam
- salt and pepper to taste
Preparation
- In a hot skillet, brown the onions in the olive oil for 4 to 5 minutes.
- Add the vinegar, maple syrup, pink peppercorns, salt and simmer for 2 to 3 minutes over low heat.
- On one side of each slice of bread, spread the butter.
- On 4 slices of bread, on the unbuttered side, place 1 slice of cheese, distribute the shredded cheese, jam, prepared onions, another slice of cheese and a slice of bread with the buttered side on top.
- In a frying pan, over medium-low heat, grill the sandwiches, 2 to 3 minutes on each side.
