White bean hummus and pita chips

Ingredients

  • 500 ml (2 cups) canned white beans, rinsed
  • 1 clove garlic, minced
  • 125 ml (½ cup) tahini
  • 5 ml (1 tsp) sweet smoked paprika
  • 1 lemon, juice
  • 60 ml (4 tbsp) olive oil
  • 60 ml (4 tbsp) water
  • Salt and pepper to taste

Pita chips

  • 4 pita breads, split in half
  • 15 ml (1 tbsp) zaatar blend
  • 3 ml (1/2 tsp) Provencal herbs blend
  • 90 ml (6 tbsp) olive oil
  • Salt and pepper to taste

Preparation

  1. Using a food processor or a hand blender,puree the beans, garlic, tahini, lemon juice, olive oil and paprika.
  2. Gradually add water, if necessary, to obtain a nice creamy and smooth texture. Check the seasoning.
  3. Preheat the oven, rack in the center to 200 °C (400 °F).
  4. Cut the pita breads into triangles.
  5. In a bowl, mix the zaatar, herbs of Provence, olive oil, salt, pepper, then add the pita bread triangles, to coat them.
  6. On a baking sheet covered with a silicone mat, spread the pita bread triangles and bake in the oven for 15 to 20 minutes, until golden.
