Ingredients
- 300 g (10 oz) fondue meat
- 60 ml (4 tablespoons) olive oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 red peppers, julienned
- 2 jalapenos, membranes and seeds removed, julienned
- 250 ml (1 cup) frozen green peas
- 1 l (4 cups) chicken broth
- 15 ml (1 tbsp.) Cajun spice blend
- 15 ml (1 tbsp.) sweet or hot paprika, as desired
- 12 to 16 peeled shrimp 16/21
- 250 ml (1 cup) raw jasmine rice
- 12 cherry tomatoes, cut in 2
- Salt and pepper to taste
Preparation
- In a saucepan, brown meat in oil until browned.
- Add the onion, garlic, peppers and jalapenos and sauté for a further 3 minutes.
- Add peas, broth, Cajun spices, paprika, shrimp, rice, tomatoes, cover and simmer for 15 minutes. Check seasoning.
