Jambalaya shrimp and beef fondue

Cooking time: 20 to 25 minutes

Ingredients

  • 300 g (10 oz) fondue meat
  • 60 ml (4 tablespoons) olive oil
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 2 red peppers, julienned
  • 2 jalapenos, membranes and seeds removed, julienned
  • 250 ml (1 cup) frozen green peas
  • 1 l (4 cups) chicken broth
  • 15 ml (1 tbsp.) Cajun spice blend
  • 15 ml (1 tbsp.) sweet or hot paprika, as desired
  • 12 to 16 peeled shrimp 16/21
  • 250 ml (1 cup) raw jasmine rice
  • 12 cherry tomatoes, cut in 2
  • Salt and pepper to taste

Preparation

  1. In a saucepan, brown meat in oil until browned.
  2. Add the onion, garlic, peppers and jalapenos and sauté for a further 3 minutes.
  3. Add peas, broth, Cajun spices, paprika, shrimp, rice, tomatoes, cover and simmer for 15 minutes. Check seasoning.
