Duck breast with Christmas spices and honey

Serves : 4

Ingredients

  • 2 duck breasts
  • 2 onions, thinly sliced
  • 2 garlic cloves, minced
  • 3 ml (1/2 tsp.) cinnamon, ground
  • 3 ml (1/2 tsp.) ginger, ground
  • 3 ml (1/2 tsp.) nutmeg, grated
  • 1 pinch cloves
  • 60 ml (4 tbsp.) honey
  • 15 ml (1 tbsp.) pink pepper, cracked
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. Clean duck breasts and check fat layer on top.
  3. In a cold frying pan, over low heat, place the duck breasts fat-side down on the pan and cook for 10 minutes, until some of the fat melts away. Remove the fat from the pan.
  4. In the same pan, over high heat, sear the duck breasts, fat side down. Once the fat is crisp, remove the duck breast and set aside in an ovenproof dish.
  5. In the same pan, add the onions and brown for 2 minutes.
  6. Add the garlic, cinnamon, ginger, nutmeg, cloves, honey and pink peppercorns and simmer for 5 minutes over medium heat. Check seasoning.
  7. Return the duck breasts to the pan and coat with the mixture.
  8. Finish cooking in the oven for 15 minutes.
  9. Serve the duck breasts with the prepared spiced honey, roast potatoes and green vegetables.
