Ingredients
- 2 duck breasts
- 2 onions, thinly sliced
- 2 garlic cloves, minced
- 3 ml (1/2 tsp.) cinnamon, ground
- 3 ml (1/2 tsp.) ginger, ground
- 3 ml (1/2 tsp.) nutmeg, grated
- 1 pinch cloves
- 60 ml (4 tbsp.) honey
- 15 ml (1 tbsp.) pink pepper, cracked
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- Clean duck breasts and check fat layer on top.
- In a cold frying pan, over low heat, place the duck breasts fat-side down on the pan and cook for 10 minutes, until some of the fat melts away. Remove the fat from the pan.
- In the same pan, over high heat, sear the duck breasts, fat side down. Once the fat is crisp, remove the duck breast and set aside in an ovenproof dish.
- In the same pan, add the onions and brown for 2 minutes.
- Add the garlic, cinnamon, ginger, nutmeg, cloves, honey and pink peppercorns and simmer for 5 minutes over medium heat. Check seasoning.
- Return the duck breasts to the pan and coat with the mixture.
- Finish cooking in the oven for 15 minutes.
- Serve the duck breasts with the prepared spiced honey, roast potatoes and green vegetables.
