Ingredients
- 1 egg yolk
- 1 tbsp. finely chopped preserved lemon
- 1 tsp. grated fresh ginger
- 1 tsp. mustard
- 200 ml neutral oil
- 1 tbsp. white wine vinegar
- Salt and pepper
Preparation
In a bowl, mix the egg yolk, mustard and vinegar. Whisk while gradually adding the oil in a drizzle to make the mayonnaise. Add the preserved lemon and ginger, season with salt and pepper. Stir and serve chilled.
