Candied Lemon and Ginger Mayonnaise

Mayonnaise au Citron Confit et Gingembre

Ingredients

  • 1 egg yolk
  • 1 tbsp. finely chopped preserved lemon
  • 1 tsp. grated fresh ginger
  • 1 tsp. mustard
  • 200 ml neutral oil
  • 1 tbsp. white wine vinegar
  • Salt and pepper

Preparation

In a bowl, mix the egg yolk, mustard and vinegar. Whisk while gradually adding the oil in a drizzle to make the mayonnaise. Add the preserved lemon and ginger, season with salt and pepper. Stir and serve chilled.
