Mayonnaise with Saffron and Candied Garlic

Mayonnaise au Safran et Ail Confit

Ingredients

  • 1 egg yolk
  • 1 pinch of saffron infused in hot water
  • 1 clove of candied garlic
  • 200 ml of neutral oil
  • 1 tbsp of white wine vinegar
  • Salt

Preparation

Infuse the saffron in hot water. Mix the candied garlic with the egg yolk and vinegar. Add the oil while whisking. Incorporate the saffron infusion and season.
