Mini bell pepper stuffed with fresh goat's cheese and herbs

Cooking time : 7 to 10 minutes

Ingredients

  • 120 g (4 oz) creamy goat cheese
  • 15 ml (1 tbsp.) chives, chopped
  • 15 ml (1 tbsp.) parsley leaves, chopped
  • 15 ml (1 tbsp.) basil leaves, chopped
  • 1 lemon, zest and juice
  • 5 ml (1 tsp.) honey
  • 12 small peppers, cut in 2, seeds and white membranes removed
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a bowl, combine cheese, chives, parsley, basil, lemon zest and juice, honey, salt and pepper. Check seasoning.
  3. Lightly fill each bell pepper with the prepared mixture.
  4. Place the peppers on an ovenproof tray lined with a silicone mat and bake for 7 to 10 minutes.
  5. NB: For a spicier mixture, add 5 ml (1 tsp.) Sambal Oeleck to the cheese.
