Ingredients
- 120 g (4 oz) creamy goat cheese
- 15 ml (1 tbsp.) chives, chopped
- 15 ml (1 tbsp.) parsley leaves, chopped
- 15 ml (1 tbsp.) basil leaves, chopped
- 1 lemon, zest and juice
- 5 ml (1 tsp.) honey
- 12 small peppers, cut in 2, seeds and white membranes removed
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a bowl, combine cheese, chives, parsley, basil, lemon zest and juice, honey, salt and pepper. Check seasoning.
- Lightly fill each bell pepper with the prepared mixture.
- Place the peppers on an ovenproof tray lined with a silicone mat and bake for 7 to 10 minutes.
- NB: For a spicier mixture, add 5 ml (1 tsp.) Sambal Oeleck to the cheese.
