Omelette with salmon cubes and smoked salmon

Omelette aux cubes de saumon et saumon fumé

Ingredients

  • 1 tube of Salmon Duo (fresh salmon and smoked salmon)
  • 4 eggs
  • 30 ml (2 tbsp) milk or cream (15%)
  • 15 ml (1 tbsp) olive oil
  • 1 small shallot or red onion, finely chopped
  • 1 tbsp fresh dill, chopped
  • Salt and pepper, to taste
  • 15 ml (1 tbsp) butter
  • A handful of baby spinach leaves (optional)

Preparation

  1. Beat the eggs in a bowl with the milk (or cream), dill, salt and pepper.
  2. Heat the olive oil in a frying pan over medium heat. Add the shallot or red onion and sauté until translucent.
  3. Empty the tube of Salmon Duo into the pan and heat rapidly for 1 to 2 minutes, stirring gently.
  4. Pour the beaten eggs into the pan. Cook the omelette over low heat, lifting the edges slightly to let the raw egg flow to the bottom.
  5. When the omelette is almost cooked, add the baby spinach leaves if desired. Fold the omelette in half and cook for another 1 to 2 minutes.
  6. Serve immediately.
