Ingredients
- 1 tube of Salmon Duo (fresh salmon and smoked salmon)
- 4 eggs
- 30 ml (2 tbsp) milk or cream (15%)
- 15 ml (1 tbsp) olive oil
- 1 small shallot or red onion, finely chopped
- 1 tbsp fresh dill, chopped
- Salt and pepper, to taste
- 15 ml (1 tbsp) butter
- A handful of baby spinach leaves (optional)
Preparation
- Beat the eggs in a bowl with the milk (or cream), dill, salt and pepper.
- Heat the olive oil in a frying pan over medium heat. Add the shallot or red onion and sauté until translucent.
- Empty the tube of Salmon Duo into the pan and heat rapidly for 1 to 2 minutes, stirring gently.
- Pour the beaten eggs into the pan. Cook the omelette over low heat, lifting the edges slightly to let the raw egg flow to the bottom.
- When the omelette is almost cooked, add the baby spinach leaves if desired. Fold the omelette in half and cook for another 1 to 2 minutes.
- Serve immediately.
