Spanish-style vegetable papillote

Ingredients

  • 125 ml (½ cup) 35% cream
  • 120 ml (8 tablespoons) olive oil
  • 15 ml (1 tbsp.) sweet smoked paprika
  • 3 garlic cloves, minced
  • 1 pinch saffron
  • 1 red bell pepper, in sticks
  • 1 yellow bell pepper, in sticks
  • 1 green bell pepper, in sticks
  • 2 onions, thinly sliced
  • 36 cherry tomatoes, halved
  • 60 ml (4 tbsp.) capers
  • Salt and pepper to taste

Preparation

  1. Preheat barbecue to high.
  2. In a bowl, combine cream, olive oil, paprika, garlic, saffron, salt and pepper.
  3. Add peppers, onions, tomatoes and capers.
  4. Place 4 sheets of aluminum foil on the counter.
  5. In the center of each sheet of foil, spread the prepared mixture and seal in foil.
  6. Place the papillotes on the barbecue grill with the lid closed and cook for 10 minutes.
  7. Turn off the heat under the papillotes and cook for a further 10 minutes.
