Ingredients
- 400 g fish fillets (cod, haddock or walleye)
- 680 g ready-to-use mashed potatoes
- 1 red onion, chopped
- 1 celery stalk, finely chopped
- 1 liter (4 cups) fresh spinach
- 2 garlic cloves, finely chopped
- 15 ml (1 tbsp.) butter
- 250 ml (1 cup) grated mozzarella cheese
- 60 ml (1/4 cup) panko breadcrumbs
- salt and pepper
Preparation
- Preheat oven to 200°C.
- Melt butter in a hot skillet over medium heat. Add the chopped red onion and sliced celery, and sauté for 5 to 7 minutes until tender. Then add the spinach and garlic and cook for about 3 minutes, until melted. Season with salt and pepper.
- In another pan, sear the fish fillets with salt and pepper for 3 to 4 minutes on each side, until cooked. Flake the fish and add to the spinach mixture.
- Spread the fish and spinach mixture in a gratin dish. Cover with mashed potatoes. Mix the grated mozzarella with the panko breadcrumbs, then sprinkle this mixture over the mashed potatoes.
- Bake at 200°C for 20 minutes, until the top is golden and crisp.
