Salmon Parmentier and Mashed Potatoes with Lemon and Dill

Ingredients

  • 300 g fresh salmon
  • 680 g ready-made mashed potatoes
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 1 tbsp olive oil or butter
  • 2 tbsp lemon zest
  • 250 ml (1 cup) fresh spinach
  • 1 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1 tbsp chopped fresh dill
  • Salt, pepper

Preparation

  1. Preheat the oven to 200°C.
  2. In a hot frying pan over medium heat, heat the olive oil or melt the butter. Add the chopped onion and garlic, then sauté for 5 minutes until softened. Add the spinach and cook until wilted. Season with salt and pepper.
  3. In another pan, quickly sear the salmon with a little salt, pepper, 1 tbsp lemon zest, and the maple syrup. Cook for 3 to 4 minutes on each side, until the salmon is lightly browned. Shred the salmon into pieces.
  4. In a baking dish, arrange the spinach mixture, then add the shredded salmon. Stir in the chopped dill. Top with the mashed potatoes, sprinkle with the remaining lemon zest and drizzle with lemon juice.
  5. Bake at 200°C for 20 minutes, until the top is golden brown.
