Pie dough (sweet or savory)

Pâte à tarte (sucrée ou salée)

Ingredients

  • 250 g (1 3/4 cups) all-purpose flour
  • 125 g (1/2 cup) cold butter, diced
  • 1 pinch salt
  • 1 egg yolk
  • 50 ml (3 tbsp) cold water (adjust if necessary)
  • 20 g (1 1/2 tbsp) sugar (optional for sweet pastry)

Preparation

  1. In a bowl, mix the flour, salt and sugar (if using).
  2. Add the cold butter and rub between your fingers until it forms a sandy texture.
  3. Add the egg yolk and cold water, then mix quickly to form a ball of dough. Do not overwork the dough.
  4. Let it rest in the refrigerator for 30 minutes before rolling it out.
