Ingredients
- 250 g (1 3/4 cups) all-purpose flour
- 125 g (1/2 cup) cold butter, diced
- 1 pinch salt
- 1 egg yolk
- 50 ml (3 tbsp) cold water (adjust if necessary)
- 20 g (1 1/2 tbsp) sugar (optional for sweet pastry)
Preparation
- In a bowl, mix the flour, salt and sugar (if using).
- Add the cold butter and rub between your fingers until it forms a sandy texture.
- Add the egg yolk and cold water, then mix quickly to form a ball of dough. Do not overwork the dough.
- Let it rest in the refrigerator for 30 minutes before rolling it out.
