Ingredients
- 60 g (2 cups) fresh basil leaves
- 60 ml (1/4 cup) toasted pine nuts
- 60 ml (1/4 cup) grated Parmesan cheese
- 1 clove garlic
- 125 ml (1/2 cup) olive oil
- Salt and pepper to taste
Preparation
In a food processor, blend basil, pine nuts, garlic and Parmesan. Drizzle in olive oil while continuing to blend until smooth. Season with salt and pepper. This pesto can be served with pasta, grilled vegetables or as a base for sandwiches.
