Ingredients
- 1 smoked Coho salmon and dried cranberry log with cream cheese topping (thawed)
- 1 cucumber, cut into thin strips (using a peeler or mandolin)
- 2 tbsp. chopped basil
- Zest of 1 lemon
- Salt and pepper to taste
Preparation
- Place a thin slice of smoked Coho salmon log on one end of each cucumber slice. Add a pinch of chopped basil and a squeeze of lemon zest.
- Gently roll up each cucumber slice tightly. Season with salt and pepper if necessary.
