Cucumber rolls with smoked Coho salmon and dried cranberries

  1. Place a thin slice of smoked Coho salmon log on one end of each cucumber slice. Add a pinch of chopped basil and a squeeze of lemon zest.
  2. Gently roll up each cucumber slice tightly. Season with salt and pepper if necessary.
