Smoked salmon pizza

Ingredients

  • 1 store-bought pizza dough
  • 30 ml (2 tbsp) olive oil
  • 15 ml (1 tbsp) mixed herbs of Provence
  • 125 ml (1/2 cup) sour cream
  • 100 g (3 1/2 oz) smoked salmon
  • 15 ml (1 tbsp) capers, drained
  • 15 ml (1 tbsp) honey
  • 1/4 lemon, zest
  • 30 ml (2 tbsp) fresh dill, chopped
  • Salt and black pepper to taste
  • 30 ml (2 tbsp) pickled onions

The pickled onions

  • 1 litre (4 cups) water
  • 30 ml (2 tbsp) salt
  • 125 ml (1/2 cup) sugar
  • 125 ml (1/2 cup) vinegar
  • 15 ml (1 tbsp) pink peppercorns, crushed
  • 2 red onions, sliced

Pizza preparation

  1. On the work surface, roll out and brush the pizza dough with olive oil, then spread the herbes de Provence.
  2. In a hot pan, over medium heat, cook the dough on each side until it is golden on both sides. Remove from the heat and let cool slightly.
  3. On the dough, spread the sour cream then spread the smoked salmon, capers, a touch of honey, lemon zest and chopped fresh dill. Season with salt and pepper.
  4. Before serving, sprinkle the marinated onions on top.

Preparing the marinated onions

  1. In the meantime, in a saucepan, bring the water, salt, sugar, vinegar and crushed pink peppercorns to a boil.
  2. In the boiling liquid, immerse the red onion rings for 3 minutes. Then drain and let cool before using on pizza.
