Pizza with egg and mushroom parsley

Ingredients

  • 500 ml (2 cups) button mushrooms, cubed
  • 90 ml (6 tablespoons) olive oil
  • 2 garlic cloves, chopped
  • 60 ml (4 tbsp.) parsley leaves, chopped
  • 60 ml (4 tbsp.) basil leaves, chopped
  • 1 pizza dough ball
  • 250 ml (1 cup) mozzarella or cheddar cheese, grated
  • 4 eggs, yolks (or whole)
  • 4 ml (3/4 tsp.) chili flakes
  • Salt and pepper to taste

Preparation

  1. Preheat convection oven, rack in center, to maximum.
  2. In a hot skillet, sauté mushrooms in some of the olive oil for 2 minutes.
  3. Add the remaining olive oil, garlic, parsley, basil, salt and pepper and mix.
  4. On a work surface, roll out the dough, sprinkle with the grated cheese, mushrooms, eggs, chilli flakes, salt and pepper.
  5. Place on a baking tray or hot pizza stone and bake for approx. 5 minutes, until the dough is cooked.
