Ingredients
- 500 ml (2 cups) button mushrooms, cubed
- 90 ml (6 tablespoons) olive oil
- 2 garlic cloves, chopped
- 60 ml (4 tbsp.) parsley leaves, chopped
- 60 ml (4 tbsp.) basil leaves, chopped
- 1 pizza dough ball
- 250 ml (1 cup) mozzarella or cheddar cheese, grated
- 4 eggs, yolks (or whole)
- 4 ml (3/4 tsp.) chili flakes
- Salt and pepper to taste
Preparation
- Preheat convection oven, rack in center, to maximum.
- In a hot skillet, sauté mushrooms in some of the olive oil for 2 minutes.
- Add the remaining olive oil, garlic, parsley, basil, salt and pepper and mix.
- On a work surface, roll out the dough, sprinkle with the grated cheese, mushrooms, eggs, chilli flakes, salt and pepper.
- Place on a baking tray or hot pizza stone and bake for approx. 5 minutes, until the dough is cooked.
