Fish au gratin with black olives

Serves : 4

Cooking time : 25 minutes

Ingredients

  • 4 cod steaks (unsalted cod)
  • 250 ml (1 cup) black olives, pitted
  • 60 ml (4 tbsp.) butter
  • 1 garlic clove
  • 60 ml (4 tbsp.) capers
  • 125 ml (1/2 cup) walnuts
  • 60 ml (4 tbsp.) breadcrumbs
  • 4 servings Grelot potatoes, boiled
  • 4 servings roasted seasonal vegetables
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 200°C (400°F).
  2. In a tall container, using a hand blender, crush the olives, butter, garlic, capers and walnuts.
  3. Stir in breadcrumbs. Check seasoning.
  4. Spread the mixture over the fish steaks.
  5. Place the fish in an ovenproof dish lined with a silicone mat, and bake for 20 to 25 minutes, depending on the thickness of the fish.
  6. Serve hot, with vegetables and boiled potatoes.
