Ingredients
- 4 cod steaks (unsalted cod)
- 250 ml (1 cup) black olives, pitted
- 60 ml (4 tbsp.) butter
- 1 garlic clove
- 60 ml (4 tbsp.) capers
- 125 ml (1/2 cup) walnuts
- 60 ml (4 tbsp.) breadcrumbs
- 4 servings Grelot potatoes, boiled
- 4 servings roasted seasonal vegetables
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a tall container, using a hand blender, crush the olives, butter, garlic, capers and walnuts.
- Stir in breadcrumbs. Check seasoning.
- Spread the mixture over the fish steaks.
- Place the fish in an ovenproof dish lined with a silicone mat, and bake for 20 to 25 minutes, depending on the thickness of the fish.
- Serve hot, with vegetables and boiled potatoes.
