Cajun chicken breast with condiment

Ingredients

The chicken

  • 4 chicken breasts
  • 60 ml (4 tablespoons) Cajun spice blend
  • 30 ml (2 tbsp.) olive oil

The condiment

  • 45 ml (3 tbsp.) capers
  • Lemon zest
  • 30 ml (2 tbsp.) honey
  • 45 ml (3 tbsp.) fresh parsley leaves, chopped
  • 45 ml (3 tbsp.) fresh mint leaves, chopped
  • 2 green onions, thinly sliced
  • 125 ml (1/2 cup) fresh pineapple, cubed
  • 60 mL (4 tbsp.) olive oil
  • salt and pepper to taste

Preparation

  1. Season and coat chicken breasts with Cajun spice blend.
  2. In a hot skillet over medium-high heat, sear chicken breasts in a little olive oil until browned on both sides.
  3. Remove the breasts and place on an ovenproof baking sheet. Bake at 200°C (400°F) for approximately 15 minutes, until cooked through.
  4. Meanwhile, prepare the condiment: in a bowl, combine the capers, lemon zest, honey, parsley, mint, green onions, pineapple cubes and olive oil, salt and pepper to taste.
  5. Slice breasts.
  6. Place chicken slices on each plate and garnish generously with prepared condiment.
  7. Serve with mashed potatoes and roasted vegetables.
