Ingredients
The chicken
- 4 chicken breasts
- 60 ml (4 tablespoons) Cajun spice blend
- 30 ml (2 tbsp.) olive oil
The condiment
- 45 ml (3 tbsp.) capers
- Lemon zest
- 30 ml (2 tbsp.) honey
- 45 ml (3 tbsp.) fresh parsley leaves, chopped
- 45 ml (3 tbsp.) fresh mint leaves, chopped
- 2 green onions, thinly sliced
- 125 ml (1/2 cup) fresh pineapple, cubed
- 60 mL (4 tbsp.) olive oil
- salt and pepper to taste
Preparation
- Season and coat chicken breasts with Cajun spice blend.
- In a hot skillet over medium-high heat, sear chicken breasts in a little olive oil until browned on both sides.
- Remove the breasts and place on an ovenproof baking sheet. Bake at 200°C (400°F) for approximately 15 minutes, until cooked through.
- Meanwhile, prepare the condiment: in a bowl, combine the capers, lemon zest, honey, parsley, mint, green onions, pineapple cubes and olive oil, salt and pepper to taste.
- Slice breasts.
- Place chicken slices on each plate and garnish generously with prepared condiment.
- Serve with mashed potatoes and roasted vegetables.
