Ingredients
- 4 bell peppers (red, yellow or green)
- 680 g ready-made mashed potatoes
- 200 g ground meat (beef, chicken or pork)
- 1 chopped onion
- 2 cloves garlic, chopped
- 1 tbsp olive oil
- 125 ml (1/2 cup) grated cheese (mozzarella or gouda type)
- 1 tsp herbes de Provence
- Salt, pepper
Preparation
- Preheat the oven to 180°C.
- Cut the bell peppers in half and remove the seeds. Set aside.
- In a hot frying pan over medium heat, heat the olive oil. Add the chopped onion and garlic, and sauté for 5 minutes until softened. Add the ground meat and cook until golden brown. Season with salt, pepper and herbes de Provence.
- In a large bowl, mix the cooked meat with the mashed potatoes. Stir in the grated cheese.
- Fill each pepper half with the mashed meat and cheese mixture. Arrange the stuffed peppers in a baking dish.
- Bake for 30 minutes, until the peppers are tender and the tops are lightly browned.
