Stuffed Peppers with Mashed Potatoes and Melted Cheese

Poivrons Farcis à la Purée de Pommes de Terre et Fromage Fondant

Ingredients

  • 4 bell peppers (red, yellow or green)
  • 680 g ready-made mashed potatoes
  • 200 g ground meat (beef, chicken or pork)
  • 1 chopped onion
  • 2 cloves garlic, chopped
  • 1 tbsp olive oil
  • 125 ml (1/2 cup) grated cheese (mozzarella or gouda type)
  • 1 tsp herbes de Provence
  • Salt, pepper

Preparation

  1. Preheat the oven to 180°C.
  2. Cut the bell peppers in half and remove the seeds. Set aside.
  3. In a hot frying pan over medium heat, heat the olive oil. Add the chopped onion and garlic, and sauté for 5 minutes until softened. Add the ground meat and cook until golden brown. Season with salt, pepper and herbes de Provence.
  4. In a large bowl, mix the cooked meat with the mashed potatoes. Stir in the grated cheese.
  5. Fill each pepper half with the mashed meat and cheese mixture. Arrange the stuffed peppers in a baking dish.
  6. Bake for 30 minutes, until the peppers are tender and the tops are lightly browned.
