Ingredients
- 680 g mashed potatoes (vacuum-packed)
- 3 egg yolks
- 60 ml (1/4 cup) melted butter
- 125 ml (1/2 cup) grated Parmesan cheese
- Salt and pepper to taste
- 1 pinch nutmeg (optional)
- 1 egg, beaten for browning (optional)
Preparation
- Heat the mashed potatoes in their vacuum bag by immersing them in boiling water for about 5 minutes. Once hot, pour the mashed potatoes into a bowl.
- Add egg yolks, melted butter, Parmesan, pinch of nutmeg (optional), salt and pepper. Blend until smooth and homogeneous.
- Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
- Transfer mashed potatoes to a pastry bag fitted with a large star tip.
- On the baking sheet, form small spiral mounds of mashed potatoes (approx. 5-6 cm in diameter), spacing them evenly.
- For a golden finish, brush each mound lightly with beaten egg.
- Place in the oven for approx. 15-20 minutes, until the duchesse potatoes are lightly browned around the edges.
- Serve immediately.
