Preparation time: 20 minutes

Cooking time : 20 minutes

Ingredients

  • 680 g mashed potatoes (vacuum-packed)
  • 3 egg yolks
  • 60 ml (1/4 cup) melted butter
  • 125 ml (1/2 cup) grated Parmesan cheese
  • Salt and pepper to taste
  • 1 pinch nutmeg (optional)

Preparation

  1. Heat the mashed potatoes in their vacuum bag by immersing them in boiling water for about 5 minutes. Once hot, pour the mashed potatoes into a bowl.
  2. Add egg yolks, melted butter, Parmesan, pinch of nutmeg (optional), salt and pepper. Blend until smooth and homogeneous.
  3. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  4. Transfer mashed potatoes to a pastry bag fitted with a large star tip.
  5. On the baking sheet, form small spiral mounds of mashed potatoes (approx. 5-6 cm in diameter), spacing them evenly.
  6. For a golden finish, brush each mound lightly with beaten egg.
  7. Place in the oven for approx. 15-20 minutes, until the duchesse potatoes are lightly browned around the edges.
  8. Serve immediately.
