Grilled chicken with peaches and cream sauce

Serves : 4

Cooking time : about 15 minutes

Ingredients

For the grilled chicken

  • 30 ml (2 tablespoons) olive oil
  • 5 ml (1 tsp.) sweet smoked paprika
  • 5 ml (1 tsp.) dried thyme
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste

For the creamy sauce

  • 250 ml (1 cup) sour cream
  • 1 clove garlic, finely chopped
  • 125 ml (1/2 cup) grated Parmesan cheese
  • 30 ml (2 tbsp.) capers, chopped
  • 1 lemon, juice and zest
  • Salt and pepper to taste

For the grilled peaches

  • 4 ripe peaches, peeled, cut into 4 and pitted
  • 1 onion, thinly sliced
  • 15 ml (1 tbsp.) olive oil
  • 15 ml (1 tbsp.) honey
  • 15 ml (1 tbsp.) white wine vinegar
  • Salt and pepper to taste

Preparation

Grilled chicken

  1. In a bowl, combine olive oil, paprika, thyme, salt and pepper.
  2. Brush chicken breasts with this mixture.
  3. In a hot grill pan, over medium-high heat, grill chicken, about 6 to 7 minutes on each side, until cooked through with grill marks.
  4. Remove and let rest a few minutes before slicing.

PS: This same preparation can also be done on the barbecue.

Creamy sauce

  1. In a bowl, combine sour cream, garlic, Parmesan, capers, lemon juice and zest.
  2. Season to taste with salt and pepper.
  3. Refrigerate until ready to serve.

Grilled peaches

  1. In a hot nonstick skillet over medium heat, grill peaches and onions in a little olive oil, about 3 to 4 minutes per side.
  2. Add the honey, vinegar, salt and pepper and cook for a further 1 minute.

Assembly

  1. Slice the grilled chicken breasts and arrange on plates.
  2. Generously coat with creamy sauce.
  3. Arrange grilled peaches next to chicken.
