Ingredients
For the grilled chicken
- 30 ml (2 tablespoons) olive oil
- 5 ml (1 tsp.) sweet smoked paprika
- 5 ml (1 tsp.) dried thyme
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
For the creamy sauce
- 250 ml (1 cup) sour cream
- 1 clove garlic, finely chopped
- 125 ml (1/2 cup) grated Parmesan cheese
- 30 ml (2 tbsp.) capers, chopped
- 1 lemon, juice and zest
- Salt and pepper to taste
For the grilled peaches
- 4 ripe peaches, peeled, cut into 4 and pitted
- 1 onion, thinly sliced
- 15 ml (1 tbsp.) olive oil
- 15 ml (1 tbsp.) honey
- 15 ml (1 tbsp.) white wine vinegar
- Salt and pepper to taste
Preparation
Grilled chicken
- In a bowl, combine olive oil, paprika, thyme, salt and pepper.
- Brush chicken breasts with this mixture.
- In a hot grill pan, over medium-high heat, grill chicken, about 6 to 7 minutes on each side, until cooked through with grill marks.
- Remove and let rest a few minutes before slicing.
PS: This same preparation can also be done on the barbecue.
Creamy sauce
- In a bowl, combine sour cream, garlic, Parmesan, capers, lemon juice and zest.
- Season to taste with salt and pepper.
- Refrigerate until ready to serve.
Grilled peaches
- In a hot nonstick skillet over medium heat, grill peaches and onions in a little olive oil, about 3 to 4 minutes per side.
- Add the honey, vinegar, salt and pepper and cook for a further 1 minute.
Assembly
- Slice the grilled chicken breasts and arrange on plates.
- Generously coat with creamy sauce.
- Arrange grilled peaches next to chicken.
