Ingredients
- 670 g braised pork shoulder (vacuum-packed)
- 800 g French fries (frozen or homemade)
- 500 ml (2 cups) poutine sauce
- 500 ml (2 cups) cheese curds
- Fried onions or green onions (optional, for garnish)
- Hot sauce, to taste
- Salt to season fries
Preparation
- Preheat oven to 190°C (375°F).
- Place the pulled pork in a baking dish and reheat in the oven for 25 minutes.
- Cook fries according to instructions (in oven or deep fryer). Immediately salt the fries while they are still hot.
- Remove the pork from the oven after 25 minutes, shred with two forks, then collect the pan juices and add to the poutine sauce in a saucepan.
- Reheat poutine sauce and adjust with a little hot sauce, to taste.
- Assemble poutine: divide fries among plates, add cheese curds and place pulled pork on top. Generously coat with hot poutine sauce.
- Garnish with fried onions or green onions, if desired.
- Serve immediately.
