Pulled pork poutine

Poutine au porc effiloché

Serves 4

Cooking time: 25 minutes

Ingredients

  • 670 g braised pork shoulder (vacuum-packed)
  • 800 g French fries (frozen or homemade)
  • 500 ml (2 cups) poutine sauce
  • 500 ml (2 cups) cheese curds
  • Fried onions or green onions (optional, for garnish)
  • Hot sauce, to taste
  • Salt to season fries

Preparation

  1. Preheat oven to 190°C (375°F).
  2. Place the pulled pork in a baking dish and reheat in the oven for 25 minutes.
  3. Cook fries according to instructions (in oven or deep fryer). Immediately salt the fries while they are still hot.
  4. Remove the pork from the oven after 25 minutes, shred with two forks, then collect the pan juices and add to the poutine sauce in a saucepan.
  5. Reheat poutine sauce and adjust with a little hot sauce, to taste.
  6. Assemble poutine: divide fries among plates, add cheese curds and place pulled pork on top. Generously coat with hot poutine sauce.
  7. Garnish with fried onions or green onions, if desired.
  8. Serve immediately.
