Piggie poutine with pork meatballs

  1. Preheat the oven to 190°C (375°F).
  2. Cook the fries according to the instructions (in the oven or in the deep fryer) until they are golden brown and crispy. When they come out of the oven, immediately salt the fries while they are still hot.
  3. Meanwhile, heat a large pot of water to boiling. Plunge the vacuum bag containing the pork meatballs into the boiling water and let it heat for 5 to 6 minutes.
  4. Open the bag and remove the pork meatballs, reserving a little of the sauce. Cut the meatballs if necessary to better distribute them in the poutine.
  5. Assemble the poutine: divide the fries among plates, add the cheese curds on top of the hot fries, then arrange the pork meatballs and their sauce on top.
  6. Serve immediately.
