Revisited shrimp roll

Ingredients

  • 4 small Naan buns (6’’) or cooked pizza dough
  • 750 ml (3 cups) Nordic shrimp
  • 60 ml (4 tbsp) mayonnaise
  • 3 green onion stalks, sliced
  • 1 shallot, finely chopped
  • 5 ml (1 tsp) Sriracha hot sauce
  • 1 mango, finely diced
  • 250 ml (1 cup) cucumber, finely diced
  • 5 ml (1 tsp) BBQ sauce
  • 1 lime, juice
  • Qs garlic butter
  • Salt and pepper to taste

Garnish

Cabbage salad with olive oil and vinegar dressing.

Preparation

  1. In a hot skillet over high heat, heat each Naan roll for 1 minute.
  2. In a bowl, mix together shrimp, mayonnaise, green onion, shallot, hot sauce, mango, cucumber, BBQ sauce and lime juice. Check seasoning.
  3. Spread each Naan with a little garlic butter.
  4. On each Naan, spread the shrimp mixture and garnish with a little coleslaw.
