Smoked salmon pastrami spring rolls

Ingredients

  • 1 100 g packet smoked pastrami salmon
  • 4 rice cakes
  • 1 carrot, grated
  • 1 cucumber, julienned
  • 1 cup cooked rice vermicelli
  • A few fresh mint leaves
  • 4 lettuce leaves
  • Soy or sesame sauce for dipping

Preparation

  1. Soak rice cakes in lukewarm water until soft.
  2. Place a lettuce leaf on each patty, followed by a little sliced pastrami smoked salmon, carrot, cucumber, rice vermicelli and mint.
  3. Roll up the patties, folding in the sides and pressing tightly.
  4. Serve the spring rolls with the sauce of your choice.
