Almond shortbread

Ingredients

  • 300ml (1 ¼ cups) almond powder
  • 300ml (1 ¼ cups) flour
  • 5ml (1 teaspoon) baking powder
  • 5ml (1 teaspoon) baking soda
  • 2 pinches salt
  • 250 ml (1 cup) unsalted butter, soft
  • 125 ml (1/2 cup) sugar
  • 125 ml (1/2 cup) brown sugar
  • 2 eggs
  • 5 ml (1 teaspoon) vanilla extract
  • 2 capfuls rum
  • Qs whole almonds

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. In a bowl, combine almond powder, flour, baking powder, baking soda and salt.
  3. In a bowl, whisk together butter, sugar and brown sugar until fluffy.
  4. Beat in eggs, vanilla and rum.
  5. Using a spatula, fold in the dry mixture.
  6. Shape dough into small balls.
  7. On an ovenproof tray lined with a silicone mat, lightly crush the dough balls, place an almond on top and bake for 9 minutes, until golden brown and the center is soft.
