Ingredients
- 300ml (1 ¼ cups) almond powder
- 300ml (1 ¼ cups) flour
- 5ml (1 teaspoon) baking powder
- 5ml (1 teaspoon) baking soda
- 2 pinches salt
- 250 ml (1 cup) unsalted butter, soft
- 125 ml (1/2 cup) sugar
- 125 ml (1/2 cup) brown sugar
- 2 eggs
- 5 ml (1 teaspoon) vanilla extract
- 2 capfuls rum
- Qs whole almonds
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- In a bowl, combine almond powder, flour, baking powder, baking soda and salt.
- In a bowl, whisk together butter, sugar and brown sugar until fluffy.
- Beat in eggs, vanilla and rum.
- Using a spatula, fold in the dry mixture.
- Shape dough into small balls.
- On an ovenproof tray lined with a silicone mat, lightly crush the dough balls, place an almond on top and bake for 9 minutes, until golden brown and the center is soft.
