Ingredients
- 60 ml (4 tablespoons) mayonnaise
- 8 ml (½ tablespoon) turmeric, ground
- 60 ml (4 tablespoons) olive oil
- 60 ml (4 tbsp.) white wine vinegar
- 1 celery root, grated
- 500 ml (2 cups) crabmeat
- 2 avocados, cubed
- 1 lemon, zest
- 1 pinch cayenne pepper
- 1 green apple, julienned
- 250 ml (1 cup) arugula
- 15 ml (1 tbsp.) honey
- Salt and pepper to taste
Preparation
- In a bowl, combine mayonnaise, turmeric, olive oil and vinegar.
- Add celery root, crabmeat and mix. Check seasoning.
- In a bowl containing the avocado cubes, add salt, pepper, lemon zest, chili pepper and mix.
- Using a cookie cutter, place the avocado cubes on each plate, then spread and cover with the crab mixture, followed by the apple julienne and finally the arugula on top.
