Young shoot salad, avocado and herb vinaigrette

Salade de jeunes pousses, avocat et vinaigrette aux herbes

Ingredients

  • 150 g baby greens (spinach, arugula, etc.) (about 4 cups)
  • 1 avocado, sliced
  • 1 handful chopped parsley and chives (about 1/4 cup)
For the dressing
  • 30 ml (2 tbsp) lemon juice
  • 45 ml (3 tbsp) olive oil
  • 5 ml (1 tsp) Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Arrange baby greens and avocado slices in a salad bowl.
  2. Prepare the dressing by mixing the lemon juice, olive oil, mustard, chopped herbs, salt and pepper.
  3. Pour the dressing over the salad, toss gently and serve.
