Ingredients
- 150 g baby greens (spinach, arugula, etc.) (about 4 cups)
- 1 avocado, sliced
- 1 handful chopped parsley and chives (about 1/4 cup)
- 30 ml (2 tbsp) lemon juice
- 45 ml (3 tbsp) olive oil
- 5 ml (1 tsp) Dijon mustard
- Salt and pepper to taste
Instructions
- Arrange baby greens and avocado slices in a salad bowl.
- Prepare the dressing by mixing the lemon juice, olive oil, mustard, chopped herbs, salt and pepper.
- Pour the dressing over the salad, toss gently and serve.
