Ingredients
- 150 g mesclun (about 4 cups)
- 1 orange, peeled and sliced
- 1 grapefruit, peeled and sliced
- 50 g (about 1/2 cup) pistachios, shelled and toasted
- 1 avocado, sliced (optional)
For the dressing
- 30 ml (2 tbsp) fresh orange juice
- 30 ml (2 tbsp) cider vinegar
- 60 ml (4 tbsp) olive oil
- Salt and pepper to taste
Instructions
- Arrange the mesclun, citrus slices, pistachios, and avocado in a salad bowl.
- Prepare the dressing by mixing the orange juice, cider vinegar, olive oil, salt and pepper.
- Pour the dressing over the salad, toss gently and serve.
