Grilled peach, chicken and feta salad

Ingredients

  • 2 chicken breasts
  • 4 peaches, halved
  • 120 ml (8 tbsp.) olive oil
  • 1 lemon, juice
  • 2 sprigs thyme, leaves removed
  • 15 ml (1 tbsp.) mayonnaise
  • 1 l (4 cups) mesclun or arugula
  • 16 cherry tomatoes, halved
  • 60 ml (4 tbsp.) pumpkin seeds, roasted
  • 250 ml (1 cup) feta cheese, cubed
  • Salt and pepper to taste

Preparation

  1. Preheat barbecue to maximum.
  2. On the grill, sear the chicken and peaches for 2 minutes on each side.
  3. Season with salt and pepper and continue, cooking indirectly with the lid closed, for 12 minutes for the chicken, removing the peaches after 4 minutes.
  4. Allow to cool, then slice the chicken and dice the peaches.
  5. Meanwhile, in a bowl, combine oil, lemon, thyme and mayonnaise. Check seasoning.
  6. Add mesclun or arugula, tomatoes, pumpkin seeds, then chicken, peaches, feta and mix. Check seasoning.
