Ingredients
- 2 chicken breasts
- 4 peaches, halved
- 120 ml (8 tbsp.) olive oil
- 1 lemon, juice
- 2 sprigs thyme, leaves removed
- 15 ml (1 tbsp.) mayonnaise
- 1 l (4 cups) mesclun or arugula
- 16 cherry tomatoes, halved
- 60 ml (4 tbsp.) pumpkin seeds, roasted
- 250 ml (1 cup) feta cheese, cubed
- Salt and pepper to taste
Preparation
- Preheat barbecue to maximum.
- On the grill, sear the chicken and peaches for 2 minutes on each side.
- Season with salt and pepper and continue, cooking indirectly with the lid closed, for 12 minutes for the chicken, removing the peaches after 4 minutes.
- Allow to cool, then slice the chicken and dice the peaches.
- Meanwhile, in a bowl, combine oil, lemon, thyme and mayonnaise. Check seasoning.
- Add mesclun or arugula, tomatoes, pumpkin seeds, then chicken, peaches, feta and mix. Check seasoning.
