Quinoa, avocado and orange vinaigrette salad

Salade de quinoa, avocat et vinaigrette à l'orange

Ingredients

  • 200 g quinoa, cooked and cooled (about 1 1/2 cups)
  • 1 avocado, diced
  • 1 orange, peeled and sliced
  • 50 g (about 1/2 cup) pecans, toasted
For the dressing
  • 30 ml (2 tbsp) fresh orange juice
  • 15 ml (1 tbsp) cider vinegar
  • 45 ml (3 tbsp) olive oil
  • Salt and pepper to taste

Instructions

  1. Mix quinoa, avocado, orange slices and pecans in a salad bowl.
  2. Make the dressing by mixing orange juice, cider vinegar, olive oil, salt and pepper.
  3. Pour dressing over salad, toss gently and serve.
