Ingredients
- 200 g quinoa, cooked and cooled (about 1 1/2 cups)
- 1 avocado, diced
- 1 orange, peeled and sliced
- 50 g (about 1/2 cup) pecans, toasted
- 30 ml (2 tbsp) fresh orange juice
- 15 ml (1 tbsp) cider vinegar
- 45 ml (3 tbsp) olive oil
- Salt and pepper to taste
Instructions
- Mix quinoa, avocado, orange slices and pecans in a salad bowl.
- Make the dressing by mixing orange juice, cider vinegar, olive oil, salt and pepper.
- Pour dressing over salad, toss gently and serve.
