Rocket salad with pears and caramelized walnuts
Ingredients
- 100 g arugula (about 4 cups)
- 2 ripe pears, thinly sliced
- 50 g (about 1/2 cup) walnuts
- 30 g (2 tbsp) cane sugar
- 50 g (about 1/2 cup) blue or goat cheese
- 15 ml (1 tbsp) balsamic vinegar
- 45 ml (3 tbsp) walnut oil
- Salt and pepper to taste
Instructions
- Caramelize the walnuts with the cane sugar, then let cool.
- Toss the arugula, pears, caramelized walnuts and cheese in a salad bowl.
- Prepare the vinaigrette with the vinegar, oil, salt and pepper.
- Pour the vinaigrette over the salad and toss.
