Rocket salad with pears and caramelized walnuts

Salade de roquette aux poires et noix caramélisées

Ingredients

  • 100 g arugula (about 4 cups)
  • 2 ripe pears, thinly sliced
  • 50 g (about 1/2 cup) walnuts
  • 30 g (2 tbsp) cane sugar
  • 50 g (about 1/2 cup) blue or goat cheese
  • 15 ml (1 tbsp) balsamic vinegar
  • 45 ml (3 tbsp) walnut oil
  • Salt and pepper to taste

Instructions

  1. Caramelize the walnuts with the cane sugar, then let cool.
  2. Toss the arugula, pears, caramelized walnuts and cheese in a salad bowl.
  3. Prepare the vinaigrette with the vinegar, oil, salt and pepper.
  4. Pour the vinaigrette over the salad and toss.
