Ingredients
- 1 100 g package smoked pastrami salmon
- 1 ripe avocado, diced
- 30 ml (2 tbsp.) red onion, finely chopped
- 15 ml (1 tbsp.) capers, drained
- 30 ml (2 tbsp.) extra-virgin olive oil
- 15 ml (1 tbsp.) fresh lemon juice
- 1/2 cup crumbled feta cheese
- Salt and pepper to taste
- 2 handfuls fresh arugula
Preparation
- In a bowl, combine avocado, red onion, capers, olive oil and lemon juice.
- Add the sliced pastrami smoked salmon and crumbled feta cheese.
- Season with salt and pepper.
- Toss gently to coat the ingredients.
- Serve the salad on a bed of arugula.
