Ingredients
- 1 smoked Coho salmon and dried cranberry log with cream cheese topping (thawed)
- 4 cups arugula or lamb's lettuce
- 1 pear, thinly sliced
- 1/2 cup toasted walnuts (walnuts or pecans)
- 1/2 cup bagel croutons
- 60 ml (4 tbsp.) olive oil
- 30 ml (2 tbsp.) white balsamic vinegar
- 1 French shallot, finely chopped
- Salt and pepper to taste
Preparation
- In a salad bowl, arrange the arugula or lamb's lettuce, add the pear slices, toasted walnuts and bagel croutons.
- In a small bowl, combine the olive oil, white balsamic vinegar and chopped shallot. Season with salt and pepper. Drizzle the vinaigrette over the salad and toss gently.
- Crumble the Coho smoked salmon and dried cranberries log over the top of the salad just before serving.
