Ingredients
- 1 onion
- 1 celery stalk
- 1 red bell pepper
- 1 large carrot
- 125 ml (1/2 cup) garlic butter
- 4 mild or hot Italian sausages
- 500 gr (17 oz) ground beef
- 250 gr (9 oz) smoked meat, finely chopped
- 250 ml (1 cup) red wine
- 1 concentrated beef bouillon cube
- 156 ml (1 small can) tomato paste
- 2 l (8 cups) tomato coulis
- 500 ml (2 cups) water
- Salt and pepper to taste
Preparation
- Using a food processor or grater, purée the onion, celery, bell pepper and carrot.
- In a hot pot, melt the garlic butter, add the vegetable mixture and cook over high heat for 5 to 6 minutes, stirring regularly. Remove and set aside.
- In the same pot, brown the sausage meat and ground beef over high heat for 10 minutes, stirring constantly.
- Add red wine and reduce.
- Add the smoked meat, reserved vegetable mixture, beef bouillon cube and tomato paste and cook for a further 5 minutes.
- Then add the tomato coulis and water, season to taste with salt and pepper, and simmer over low heat for 2 hours, stirring occasionally.
- Serve with pasta or lasagne.
