Ingredients
- 250 ml (1 cup) shallot, minced
- 60 ml (4 tablespoons) sesame oil
- 2 garlic cloves, minced
- 45 ml (3 tbsp.) ginger, grated
- 125 ml (1/2 cup) maple syrup
- 60 ml (4 tbsp.) rice vinegar
- 15 ml (1 tbsp.) Asian hot sauce (Sambal Oelek or Sriracha)
- 1 salmon fillet heart, approx. 500 g (17 oz)
- 45 ml (3 tbsp.) sesame seeds
- 125 ml (1/2 cup) green onion, sliced
- Salt and pepper to taste
Topping
- 4 portions cooked rice
- 1 lime, cut into eighths
- 4 portions sautéed green vegetables (beans, bok choy, etc.)
Preparation
- Preheat oven, rack in center, to 218°C (425°F).
- In a hot skillet, sauté shallot in sesame oil for 2 minutes.
- Add garlic, ginger, maple syrup, rice vinegar and hot sauce and cook, stirring regularly, for 5 minutes.
- Place the salmon fillet on a baking tray, pour the mixture over the top and sprinkle with sesame seeds. Bake for 15 minutes.
- To caramelize, broil for 5 minutes.
- Sprinkle the green onion over the salmon.
- Serve with rice, lime and green vegetables.
