Teriyaki-style maple salmon

Ingredients

  • 250 ml (1 cup) shallot, minced
  • 60 ml (4 tablespoons) sesame oil
  • 2 garlic cloves, minced
  • 45 ml (3 tbsp.) ginger, grated
  • 125 ml (1/2 cup) maple syrup
  • 60 ml (4 tbsp.) rice vinegar
  • 15 ml (1 tbsp.) Asian hot sauce (Sambal Oelek or Sriracha)
  • 1 salmon fillet heart, approx. 500 g (17 oz)
  • 45 ml (3 tbsp.) sesame seeds
  • 125 ml (1/2 cup) green onion, sliced
  • Salt and pepper to taste

Topping

  • 4 portions cooked rice
  • 1 lime, cut into eighths
  • 4 portions sautéed green vegetables (beans, bok choy, etc.)

Preparation

  1. Preheat oven, rack in center, to 218°C (425°F).
  2. In a hot skillet, sauté shallot in sesame oil for 2 minutes.
  3. Add garlic, ginger, maple syrup, rice vinegar and hot sauce and cook, stirring regularly, for 5 minutes.
  4. Place the salmon fillet on a baking tray, pour the mixture over the top and sprinkle with sesame seeds. Bake for 15 minutes.
  5. To caramelize, broil for 5 minutes.
  6. Sprinkle the green onion over the salmon.
  7. Serve with rice, lime and green vegetables.
