Chicken noodle soup

Soupe poulet et nouilles

Serves 4

Ingredients

  • 400 g simmered chicken (sweet mustard & maple syrup)
  • 1.5 liters (6 cups) chicken broth
  • 500 ml (2 cups) noodles (vermicelli or small noodles)
  • 1 carrot, brunoise-cut (small dice)
  • 1 leek, sliced
  • 1 celery stalk, sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  1. Heat the chicken stock in a large saucepan.
  2. Add the carrot, leek and celery to the broth and cook for about 10 minutes, until the vegetables are tender.
  3. Stir in the noodles and shredded chicken, then simmer for 5 to 7 minutes, until the noodles are cooked.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with fresh parsley.
