Maple and miso roasted salmon

Ingredients

  • 125 ml (½ cup) maple syrup
  • 125 ml (½ cup) Panko breadcrumbs
  • 125 ml (½ cup) miso
  • 2 cloves garlic, minced
  • 30 ml (2 tbsp) olive oil
  • 600 gr (20 ½ oz) salmon fillet heart
  • 4 servings oven-roasted potatoes
  • 60 ml (4 tbsp) sour cream
  • 60 ml (4 tbsp) chives, chopped
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the middle, to 200 °C (400 °F).
  2. In a bowl, mix the maple syrup, miso, breadcrumbs, garlic and oil.
  3. In a baking dish or pan, place the salmon, brush the salmon with the prepared mixture and bake for 20 minutes.
  4. Serve with roasted potatoes, sour cream and chives.
