BLT SANDWICH WITH CARAMELIZED HAM

Portions : 4 - Preparation : 10 minutes - Cooking : 15 minutes

Ingredients

  • 16 slices cooked ham
  • 120 ml (8 tablespoons) brown maple syrup
  • 30 ml (2 tablespoons) butter
  • 8 slices multigrain bread
  • 80 ml (1/3 cup) mayonnaise
  • 5 ml (1 tsp.) shriracha hot sauce
  • 8 Boston lettuce leaves
  • 12 slices tomato
  • 250ml (1 cup) fried onions or shallots
  • 4 slices cheddar or mozzarella cheese

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. Place parchment paper or a baking mat on a baking sheet.
  3. Brush both sides of each ham slice with maple syrup, place on the baking sheet and bake for about 15 minutes.
  4. Butter each slice of bread and brown in a hot pan.
  5. Mix mayonnaise and hot sauce.
  6. On 4 slices of bread, spread the spicy mayonnaise, tomato slices, ham, lettuce, cheese, fried shallots, a little more mayonnaise and close the sandwich.

ENDIVE AND CHICKEN SALAD, WALNUTS AND BLUE CHEESE, SYRUP VINAIGRETTE

Portions : 4 - Preparation : 20 minutes - Cooking : 8 minutes

Ingredients

  • 2 Québec chicken breasts, cut into 4 cutlets
  • 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 30 ml (2 tbsp.) maple sugar
  • 8 endives, sliced
  • 2 green apples, julienned
  • 250 ml (1 cup) seedless red grapes, halved
  • 250 ml (1 cup) walnuts, coarsely chopped
  • 125 ml (1/2 cup) blue cheese, shredded
  • Salt and pepper to taste

Dressing

  • 15 ml (1 tablespoon) Dijon mustard
  • 1 lemon, juice
  • 90 ml (6 tbsp) golden maple syrup
  • 120 ml (8 tbsp.) olive oil
  • Salt and pepper to taste

Preparation

  1. In a hot skillet, brown the chicken in the fat of your choice, 4 minutes on each side.
  2. Season with salt and pepper, then sprinkle with maple sugar. Let cool before slicing into thin rounds.
  3. For the vinaigrette, mix mustard, lemon juice, maple syrup, olive oil, salt and pepper in a bowl. Check seasoning,
  4. In a large bowl, combine endives, apples, grapes, walnuts and vinaigrette.
  5. Sprinkle with blue cheese and chicken slices.

MAPLE SUGAR CHEESE PIZZA

Portions : 4 - Preparation : 15 minutes - Cooking time : 5 to 10 minutes

Ingredients

  • 1 pizza dough ball
  • 250 ml (1 cup) mozzarella cheese, grated
  • 250 ml (1 cup) cheddar cheese, grated
  • ½ roll Paillot de chèvre, sliced
  • 125 ml (1/2 cup) blue cheese, shredded
  • 4 figs, quartered
  • 500 ml (2 cups) arugula
  • 60 ml (4 tbsp.) olive oil
  • 30 ml (2 tbsp.) red wine vinegar
  • 60 ml (4 tbsp.) maple sugar
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, with the rack in the middle and a pizza stone, if possible, on high.
  2. Divide the dough ball in half and roll out fairly thin.
  3. On each pizza dough, divide the mozzarella, cheddar, goat cheese slices, blue cheese slivers and figs and bake for 5 to 10 minutes (depending on whether you're using a pizza stone or not).
  4. In a bowl, mix the arugula, olive oil, vinegar, salt and pepper. Check seasoning.
  5. On each pizza, sprinkle maple sugar, spread seasoned arugula and serve hot.
