Grilled shrimp skewers with curry and peach

GRILLED SHRIMP SKEWERS WITH CURRY AND PEACH

Portions : 4 - Preparation time : 5 minutes - Cooking time : 10 minutes

Ingredients

  • 2 cloves garlic
  • 15 ml (1 tablespoon) madras curry powder
  • 125 ml (1/2 cup) cottage cheese or plain yogurt
  • 60 ml (4 tbsp.) coriander, chopped
  • 1 lime, zest
  • 1 pinch cayenne pepper
  • 15 ml (1 tbsp.) honey
  • 15 ml (1 tbsp.) olive oil
  • 16 shrimp 16/20, peeled
  • 2 peaches, chopped
  • 2 red peppers, coarsely chopped
  • 30 ml (2 tbsp.) coconut, toasted
  • Salt and pepper to taste

Preparation

  1. Preheat the BBQ to maximum.
  2. In a bowl, combine garlic, curry powder, cottage cheese, coriander, lime zest, cayenne pepper, honey and olive oil. Season to taste with salt and pepper.
  3. Add shrimps and coat.
  4. Make 4 skewers, alternating shrimp, peach and red bell pepper.
  5. Place the skewers on the grill and cook for 3 minutes on each side.
  6. Sprinkle with coconut and enjoy.
