GRILLED SHRIMP SKEWERS WITH CURRY AND PEACH
Portions : 4 - Preparation time : 5 minutes - Cooking time : 10 minutes
Ingredients
- 2 cloves garlic
- 15 ml (1 tablespoon) madras curry powder
- 125 ml (1/2 cup) cottage cheese or plain yogurt
- 60 ml (4 tbsp.) coriander, chopped
- 1 lime, zest
- 1 pinch cayenne pepper
- 15 ml (1 tbsp.) honey
- 15 ml (1 tbsp.) olive oil
- 16 shrimp 16/20, peeled
- 2 peaches, chopped
- 2 red peppers, coarsely chopped
- 30 ml (2 tbsp.) coconut, toasted
- Salt and pepper to taste
Preparation
- Preheat the BBQ to maximum.
- In a bowl, combine garlic, curry powder, cottage cheese, coriander, lime zest, cayenne pepper, honey and olive oil. Season to taste with salt and pepper.
- Add shrimps and coat.
- Make 4 skewers, alternating shrimp, peach and red bell pepper.
- Place the skewers on the grill and cook for 3 minutes on each side.
- Sprinkle with coconut and enjoy.
