HERB-CRUSTED LAMB CHOPS
Portions : 4 - Preparation : 15 minutes - Cooking time : 20 to 25 minutes
Ingredients
- 2 Québec lamb chops, trimmed
- 1/2 bunch parsley, leaves removed
- 3 sprigs rosemary, leaves removed
- 2 sprigs thyme, leaves removed
- 2 garlic cloves, chopped
- 125 ml (1/2 cup) walnuts, chopped (pistachios, almonds, walnuts)
- 30 ml (2 tbsp.) strong mustard
- 250 ml (1 cup) unsalted butter
- 125 ml (1/2 cup) panko breadcrumbs
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 220°C (425° F).
- In a hot skillet, brown the racks of lamb. Season with salt and pepper.
- Arrange on a baking sheet and bake for 8 minutes.
- Meanwhile, in a food processor, blend the parsley, rosemary, thyme, garlic, walnuts, mustard, butter, breadcrumbs, salt and pepper.
- Slice the squares into lamb chops.
- Arrange the chops on an ovenproof baking sheet.
- Spread herb mixture over each chop.
- Bake under the broiler until the herb mixture is nicely toasted.
