Pumpkin Humus

PUMPKIN HUMUS

Output: 1 l (4 cups) - Preparation time: 5 minutes

Ingredients

  • 500 ml (2 cups) chickpeas, cooked
  • 125 ml (1/2 cup) Tahini (sesame seeds, puréed)
  • 2 garlic cloves, peeled
  • 80 ml (1/3 cup) lemon juice
  • 80 ml (1/3 cup) olive oil
  • 80 ml (1/3 cup) pumpkin purée
  • 90 ml (6 tbsp) water
  • 90 ml (6 tbsp) pumpkin seeds, crushed (garnish)
  • Salt and pepper to taste

Preparation

  1. In the bowl of a food processor, add all ingredients and blend until creamy. Check seasoning.
  2. Place in a serving bowl and scatter the crushed pumpkin seeds over the top.
