PUMPKIN HUMUS
Output: 1 l (4 cups) - Preparation time: 5 minutes
Ingredients
- 500 ml (2 cups) chickpeas, cooked
- 125 ml (1/2 cup) Tahini (sesame seeds, puréed)
- 2 garlic cloves, peeled
- 80 ml (1/3 cup) lemon juice
- 80 ml (1/3 cup) olive oil
- 80 ml (1/3 cup) pumpkin purée
- 90 ml (6 tbsp) water
- 90 ml (6 tbsp) pumpkin seeds, crushed (garnish)
- Salt and pepper to taste
Preparation
- In the bowl of a food processor, add all ingredients and blend until creamy. Check seasoning.
- Place in a serving bowl and scatter the crushed pumpkin seeds over the top.
