LACQUERED HAM, CAESAR-STYLE GOURMET BRUSSELS SPROUTS

Ingredients
Ham
- 500 ml (2 cups) potato cubes
- 1 onion, chopped
- 36 Brussels sprouts, cleaned and halved
- 60 ml (4 tbsp.) butter
- 1 head ham, cut into 4 thick slices
- 90 ml (6 tbsp) maple syrup
- 2 garlic cloves, chopped
- Salt and pepper to taste
Caesar dressing
- 75 ml (5 tbsp.) grated Parmesan cheese
- 120 ml (8 tbsp.) olive oil
- ½ lemon, juice
- 1 egg, yolk
- 15 ml (1 tbsp.) capers, chopped
- Salt and pepper to taste
Preparation
- In a hot skillet, sauté the potato cubes, onion and Brussels sprouts in the butter for 2-3 minutes.
- Lower the heat, add the garlic and continue cooking over low heat for 10 minutes. Check seasoning.
- In another hot pan, sear the ham slices for 2 minutes on each side.
- Add the maple syrup and continue cooking over medium heat, 4 minutes. Check seasoning.
- Meanwhile, in a bowl, whisk the egg yolk, lemon juice, olive oil, capers and Parmesan. Check the seasoning.
- Serve the Brussels sprouts with the ham slices, topped with the Caesar sauce.
