Lacquered ham, gourmet Brussels sprouts Caesar style

LACQUERED HAM, CAESAR-STYLE GOURMET BRUSSELS SPROUTS

Portions : 4 - Preparation time : 10 minutes - Cooking time : about 20 minutes

Ingredients

Ham

  • 500 ml (2 cups) potato cubes
  • 1 onion, chopped
  • 36 Brussels sprouts, cleaned and halved
  • 60 ml (4 tbsp.) butter
  • 1 head ham, cut into 4 thick slices
  • 90 ml (6 tbsp) maple syrup
  • 2 garlic cloves, chopped
  • Salt and pepper to taste

Caesar dressing

  • 75 ml (5 tbsp.) grated Parmesan cheese
  • 120 ml (8 tbsp.) olive oil
  • ½ lemon, juice
  • 1 egg, yolk
  • 15 ml (1 tbsp.) capers, chopped
  • Salt and pepper to taste

Preparation

  1. In a hot skillet, sauté the potato cubes, onion and Brussels sprouts in the butter for 2-3 minutes.
  2. Lower the heat, add the garlic and continue cooking over low heat for 10 minutes. Check seasoning.
  3. In another hot pan, sear the ham slices for 2 minutes on each side.
  4. Add the maple syrup and continue cooking over medium heat, 4 minutes. Check seasoning.
  5. Meanwhile, in a bowl, whisk the egg yolk, lemon juice, olive oil, capers and Parmesan. Check the seasoning.
  6. Serve the Brussels sprouts with the ham slices, topped with the Caesar sauce.
