Banana curry mayonnaise

BANANA CURRY MAYONNAISE

Ingredients

  • 1 egg, yolk removed
  • ½ banana
  • curry powder to taste
  • 15 ml (1 tablespoon) lime juice
  • 1 pinch salt
  • 250 ml (1 cup) canola oil

Preparation

  1. In a bowl, using a hand blender, grind and blend the egg yolk, banana, curry powder, lime juice and salt until frothy.
  2. Using the hand blender or a whisk, gradually add a very small amount of canola oil. When the mayonnaise begins to set, pour in the remaining oil in a thin stream, without stopping to mix, for about 2 minutes, until the mixture has thickened and paled. The mayonnaise becomes firmer and firmer. As soon as it holds on to the spoon, it's ready.

Nb: with 1 egg yolk, you can make up to almost a liter of mayonnaise.
