BANANA CURRY MAYONNAISE

Ingredients
- 1 egg, yolk removed
- ½ banana
- curry powder to taste
- 15 ml (1 tablespoon) lime juice
- 1 pinch salt
- 250 ml (1 cup) canola oil
Preparation
- In a bowl, using a hand blender, grind and blend the egg yolk, banana, curry powder, lime juice and salt until frothy.
- Using the hand blender or a whisk, gradually add a very small amount of canola oil. When the mayonnaise begins to set, pour in the remaining oil in a thin stream, without stopping to mix, for about 2 minutes, until the mixture has thickened and paled. The mayonnaise becomes firmer and firmer. As soon as it holds on to the spoon, it's ready.
Nb: with 1 egg yolk, you can make up to almost a liter of mayonnaise.
