MEGA PATTY
Portions : 4 - Preparation : 15 minutes - Cooking time : 35 to 40 minutes
Ingredients
- 4 large potatoes
- 4 to 8 slices mozzarella
- 2 tomatoes, sliced
- 8 slices bacon, cooked
- 8 basil leaves, chopped
- 90 ml (6 tbsp) olive oil
- 125 ml (1/2 cup) panko breadcrumbs
- 125 ml (1/2 cup) grated Parmesan cheese
Preparation
- Place potatoes in a pot of cold, salted water, bring to a boil and cook until almost fully cooked. Remove and cool completely.
- Preheat barbecue to maximum.
- Using a knife, score the potatoes ¾ of the way down to form a sort of potato fan.
- Top each potato with slices of cheese, tomato and bacon, then sprinkle with basil and olive oil.
- Mix the breadcrumbs and Parmesan in a bowl and sprinkle over the potatoes.
- On the barbecue grill, cook indirectly (fire turned off under the potatoes), lid closed, for 20 minutes, until the potatoes are cooked through.
