Panna cotta

PANNA COTTA

Portions : 7 to 8

Preparation time: 5 minutes - Cooking time: 8 minutes - Chilling time: 120 minutes

INGREDIENTS

  • 500 ml (2 cups) 35% M.F. cream
  • 250 ml (1 cup) 2% milk
  • 125 ml (1/2 cup) sugar
  • 1 vanilla bean, split lengthwise and seeded
  • 1 lemon, zest
  • 1 pinch salt
  • 4 gelatine leaves, soaked for a few minutes in cold water and squeezed dry
  • Pure fruit jam of your choice

METHOD

  1. Heat the milk and cream in a saucepan.
  2. Add the sugar, vanilla, lemon zest and pinch of salt and simmer for 5 minutes, stirring with a spatula.
  3. Add the wrung-out gelatine leaves and stir, allowing them to melt in the hot liquid.
  4. Strain the mixture through a sieve.
  5. Divide into cups and refrigerate for at least 2 hours before serving.
  6. Serve with a little pure fruit jam on top.
