Grilled chicken breast with mustard and brown leffe

GRILLED CHICKEN BREAST WITH MUSTARD AND BROWN LEFFE

Portions : 4 - Preparation : 15 minutes - Cooking : 15 minutes

Ingredients

  • 1 bottle Leffe brown beer
  • 1 shallot, chopped
  • 1 garlic clove, chopped
  • 15 ml (1 tablespoon) curry powder
  • 15 ml (1 tablespoon) 35% cream
  • 30 ml (2 tbsp.) strong mustard
  • 4 skinless, boneless chicken breasts
  • Salt and pepper to taste

Preparation

  1. Preheat BBQ to maximum.
  2. In a saucepan, sauté shallot in olive oil for 1 minute. Add garlic and deglaze with beer.
  3. Reduce to ¾, then add the curry powder, cream and mustard. Cook for a further 2 minutes, then season and keep warm.
  4. Season chicken breasts and sear on the BBQ, 2 minutes on each side.
  5. Turn off the burner on one side and keep the other on.
  6. Brush prepared sauce over chicken. Place the meat on the grill, unlit side down, and close the lid. Cook for 8 to 9 minutes until chicken is cooked through (77° C).
  7. Serve with white rice and sautéed vegetables.
