GRILLED CHICKEN BREAST WITH MUSTARD AND BROWN LEFFE

Ingredients
- 1 bottle Leffe brown beer
- 1 shallot, chopped
- 1 garlic clove, chopped
- 15 ml (1 tablespoon) curry powder
- 15 ml (1 tablespoon) 35% cream
- 30 ml (2 tbsp.) strong mustard
- 4 skinless, boneless chicken breasts
- Salt and pepper to taste
Preparation
- Preheat BBQ to maximum.
- In a saucepan, sauté shallot in olive oil for 1 minute. Add garlic and deglaze with beer.
- Reduce to ¾, then add the curry powder, cream and mustard. Cook for a further 2 minutes, then season and keep warm.
- Season chicken breasts and sear on the BBQ, 2 minutes on each side.
- Turn off the burner on one side and keep the other on.
- Brush prepared sauce over chicken. Place the meat on the grill, unlit side down, and close the lid. Cook for 8 to 9 minutes until chicken is cooked through (77° C).
- Serve with white rice and sautéed vegetables.
