GOURMET ROAST POTATOES
Portions : 2 - Preparation : 10 minutes - Cooking time : between 15 and 20 minutes
Ingredients
- 12 to 16 small potatoes, cut in 2
- 1 onion, chopped
- 30 ml (2 tablespoons) olive oil
- 30 ml (2 tbsp.) butter
- 1 garlic clove, chopped
- 5 ml (1 tsp.) herbes de Provence blend
- 60 ml (4 tbsp.) grated Parmesan cheese
- 60 ml (4 tbsp.) fresh parsley leaves, chopped
- Salt and pepper to taste
Preparation
- In a hot frying pan, sear the potatoes and onion in olive oil for 2 minutes on each side.
- Then, over low heat, add the butter, garlic, herbes de Provence, salt and pepper and cook for a further 10 minutes.
- Add the Parmesan and cook for a further 2 minutes, turning the potatoes over.
- Cooking is complete when the potatoes are tender in the center. Check the seasoning.
- Add parsley before serving.
