Gourmet roast potatoes

GOURMET ROAST POTATOES

Portions : 2 - Preparation : 10 minutes - Cooking time : between 15 and 20 minutes

Ingredients

  • 12 to 16 small potatoes, cut in 2
  • 1 onion, chopped
  • 30 ml (2 tablespoons) olive oil
  • 30 ml (2 tbsp.) butter
  • 1 garlic clove, chopped
  • 5 ml (1 tsp.) herbes de Provence blend
  • 60 ml (4 tbsp.) grated Parmesan cheese
  • 60 ml (4 tbsp.) fresh parsley leaves, chopped
  • Salt and pepper to taste

Preparation

  1. In a hot frying pan, sear the potatoes and onion in olive oil for 2 minutes on each side.
  2. Then, over low heat, add the butter, garlic, herbes de Provence, salt and pepper and cook for a further 10 minutes.
  3. Add the Parmesan and cook for a further 2 minutes, turning the potatoes over.
  4. Cooking is complete when the potatoes are tender in the center. Check the seasoning.
  5. Add parsley before serving.
