FAA MAPLE CARAMEL CRISPY PORK

Ingredients
- 1 jar FAA (Fait avec Amour) maple caramel
- 1 Québec pork tenderloin, sliced ½'' thick
- 60 ml (4 tbsp.) canola oil
- 1 egg, beaten
- 125 ml (1/2 cup) corn or potato starch
- 15 ml (1 tbsp.) baking powder
- 8 ml (1/2 tbsp) pink pepper, coarsely chopped
- Salt and pepper to taste
- Qs frying oil
Topping
- 3 red onions, thinly sliced
- 60 ml (4 tbsp.) olive oil
- 1 yellow bell pepper, julienned
- 2 garlic cloves, chopped
- 3 sprigs thyme, leaves removed
- 1 rosemary sprig, leaves removed
- 60 ml (4 tbsp.) capers
- 1 lemon, juice
- Salt and pepper to taste
Preparation
- In a bowl, coat pork slices with oil, salt and pepper.
- Add beaten egg and mix.
- Add cornstarch and baking powder and coat pork slices.
- In a hot skillet, brown pork slices in ½" oil for 2 to 3 minutes, until crisp.
- Remove and set aside on paper towels. Season again with salt and pepper.
- In a hot skillet, remove excess oil and sauté red onions in olive oil for 2 to 3 minutes.
- Add the bell bell pepper, garlic, thyme, rosemary, capers, lemon juice, salt and pepper and continue cooking until the vegetables are colored and tender. Check seasoning.
- In a bowl containing 45 to 60 ml (3 to 4 tbsp.) caramel, add and coat pork slices with caramel.
- Serve pork slices with sautéed vegetables and a starch of your choice (rice, noodles, polenta, couscous, quinoa, etc.).
